Housed in the former Noma space, Barr was conceived by chef Thorsten Schmidt and René Redzepi, with its culinary identity inspired by the food and drinking culture of the North Sea region – encompassing Scandinavia, Germany, the Benelux and the British Isles.
A comforting, homely and rustic atmosphere is created, while classic dishes are celebrated for their simplicity and familiarity. Although Danish meatballs can be found on the menu, the dishes are not necessarily native to Denmark; instead, the ingredients are. The food is designed to be enjoyed with beer, with 20 traditional-style craft beer taps being offered. Among the signature dishes are bone-marrow-glazed Belgian waffles with lumpfish roe and an exceptional free-range Wiener-style schnitzel, made with non-veal meat and given an Austrian classic a Danish twist.
