To Infinity & Beyond takes guests on a cosmic journey through flavour, texture and inventive mixology. Opened in December 2019, the bar draws inspiration from space and science, translating the mysteries of the universe into a drinking experience that is as imaginative as it is delicious. Its philosophy is simple yet expansive: each cocktail is treated as a small universe, with seemingly endless possibilities waiting to be discovered.
Leading the team is Mars Chang, the 2021 World Class Taiwan Bartender of the Year, who brings a distinctly scientific mindset to the bar’s creative process. Advanced techniques including distillation and centrifugation are used to isolate and intensify flavours, resulting in cocktails that are layered, intricate and often unexpected. Rather than organising the menu around conventional cocktail categories, the bar focuses on texture, with classifications such as creaminess, clarification and carbonation providing an accessible way for guests to navigate its contemporary creations. The result is a playful yet highly considered approach to mixology that pushes the boundaries of what a cocktail can be.
