What began as a humble hawker stall under Madam Foo Kui Lian in 1986 has grown into one of Singapore’s most celebrated culinary institutions. Tian Tian Hainanese Chicken Rice rose to prominence in the early 2000s at Maxwell Food Centre, where long daily queues quickly cemented its status as a must-eat hawker icon.

Global recognition surged when celebrity chef Anthony Bourdain famously praised its chicken rice as “so fragrant and delicious, it can be eaten on its own.” The stall later triumphed over Gordon Ramsay in a widely publicized hawker showdown—further solidifying its legendary reputation.

The magic lies in the details: rice cooked in rich chicken stock and fat, infused with ginger, garlic, and pandan leaves; tender poached chicken plunged into ice water for that signature smooth, gelatinous skin; and a plate completed with crisp cucumber slices.
