Just a short walk from the Giant Red Swing near Chinatown, Pad Thai Thip Samai is one of Bangkok’s most famous destinations for the country’s most iconic noodle dish. Revered for its consistency and craft, the restaurant uses high-quality ingredients and still cooks its Pad Thai over roaring charcoal flames, imparting a distinctive smoky depth. The standout Pad Thai haw kai goong features soft rice noodles tossed with plump, juicy prawns, then flash-wrapped in a delicate, paper-thin egg blanket.

The cooking process is a performance in itself. Shrimp are first fried in oil before generous handfuls of dry rice noodles hit the wok, soaking up sauces and aromatics as heat and steam quickly bring them to life. Tofu, baby shrimp, leeks, bean sprouts, and other ingredients are folded in according to the recipe. Finally, the noodles are pushed aside and eggs are cracked into the wok, binding everything together in a rich, savory finish that defines Thip Samai’s legendary Pad Thai.
