Fajitas are prepared by basically every Mexican/Tex-Mex restaurant in town, and most dishes are basically the same. But Polvos’ Fajitas al Guajilo is different and unique. In Polvos, the tender, sizzling chicken or beef or pastor is cooked and sautéed in a rich, red sauce with spicy sun-dried peppers, pecans, raisins, peanuts, grilled onions, poblano and sun-dried tomatoes. It is served with guacamole and sour cream, rice, charro beans, corn or flour tortillas and topped with peanuts, pecans, and raisins.
