One of my favorite quick snacks in Bogotá is arepa de huevo (egg arepa), a typical Colombian street food from the Caribbean coast. The concept is simple: you start with a fried corn flour arepa, open a hole in it, pour in a raw egg, cover the hole with some dough, and put it back in the oil until the arepa is crispy and browned, and the egg is thoroughly cooked. At Gaira Café they get it just right. These arepas de huevo are crunchy, deliciously crisp, served with a hot sauce, wrapped in a banana leaf and on a plate made from a coconut. These arepas go great with a refreshing limonada de coco.
