Otto Spahn serves a number of ceviches and seafood delights made with fresh local product from his truck at the Telefonica Gastro Park. His smoked marlin stuffed chiles are a standout. Tender, flavorful smoked marlin is stuffed in a roasted poblano chile, then deep fried in beer batter, sliced open, drizzled with crème fraîche and served atop a bed of shredded cabbage. The smoky essence of the marlin blends nicely with the sweetness of the roasted chile.
