Patacones con ceviche
Patacones are crunchy green unripe sweet plantain slices fried until golden and patted to remove excess oil, pounded flat, salted and fried again until golden brown. Many people in Venezuela – and mostly in Maracaibo - top them with white shredded cheese and ketchup. At Madera Fina, patacones are formed as little baskets filled with flavorful and refreshing ceviche, a mix of fresh fish from the coast, parsley, purple onion, ají dulce and lemon juice. Fish varies according to the season.
