Prudhomme was one of the first chefs to achieve celebrity status. He shot to fame not long after opening K-Paul's Louisiana Kitchen in the early 1980s. Having received no formal training as a chef, he brought authentic Louisiana home cooking to the fore at a time where the American restaurant scene was flooded with European cuisine, making a lasting change to the way people eat in New Orleans.
