Tian Tian Hainanese Chicken Rice

The Chicken Rice at Tian Tian is one of Singapore's most iconic dishes. It not only won Anthony Bourdain's approval but subsequently defeated Gordon Ramsay in a hawker duel, and for good reason. The rice is cooked in chicken stock and fat, ginger, garlic and pandan leaves. The meaty chicken is boiled and then plunged into ice cold water, resulting in skin that is smooth and chewy, with a gel underneath. The tenderly juicy chicken and fragrant oily rice are served with sliced cucumber. Customize the final flavors by your mixture of dark soy sauce, minced ginger and red hot chili sauce, either as a dip or drizzled on top. Heaven!
