Fans of this classic Lebanese staple head for Joseph in the heart of Sin El Fil in Beirut, which has been serving hungry clients for more than 20 years. Two huge spits of alternating fat and seasoned meat rotate around their center, soaking up the juices while the tender meat cooks slowly. Generous portions of chicken and beef are shaved off their stacks, scooped into fresh pitas, garnished with crisp lettuce, tomatoes, onions and parsley and slathered with tahini or garlic aioli.
